Dreamy childhood nostalgia meets the sophistication of a great cold brew in this must-try treat. I give you the cold brew ice cream sandwich.

Cold Brew Ice Cream Sandwiches:


  • 600ml thickened cream
  • 395g sweetened condensed milk
  • 100ml cold brew concentrate
  • 1 1/2 packets malt biscuits


Line a tray or freezable container with baking paper and place one layer of malt biscuits upside down on the base.

Using electric beaters, whip cream and condensed milk together until well combined and thickened. Add cold brew and mix well.

Spread ice cream filling over biscuit layer, smoothing the top flat. Top with a second layer of biscuits, aligning them as best you can with the bottom layer. 

Freeze overnight.

Remove from tray. Trim excess ice cream filling from the sides and cut into portions to serve. Let the good times roll.

Ah, Aussie Christmas - 'Tis the season to drink cold brew! With our limited release of cold brew concentrate out of the box for Christmas, we're getting creative with a series of recipes to inspire you to brew differently this summer.

First up, jelly shots! So easy to make with just 2 ingredients and water.

Cold Brew Jelly Shots


  • 1 packet (85g) Aeroplane "Create-a-Jelly"
  • 250ml Boiling water
  • 200ml Cold Brew Concentrate

Empty jelly crystals into a bowl and add boiling water, stirring well to dissolve. Add cold brew concentrate and mix well. Pour into shot glasses and refridgerate until firm.

Run a toothpick around the edge of each shot to loosen it before enjoying. Bottom's up!

And now for something completely different... Our cold brew concentrate is perfection in this surprising recipe which highlights the lemony tang present in the coffee. Coffee flavour with a zesty zing - it's so good!

Cold Brew Cheesecake Whip


  • 250g block cream cheese
  • 2 1/2 Cups icing sugar
  • 50g unsalted butter, softened.
  • 60ml cold brew concentrate
  • Half a packet plain sweet biscuit, processed to crumbs, to serve.


Using an electric beater, combine cream cheese and icing sugar in a large bowl. Add soft butter and mix until smooth. Pour in cold brew concentrate. Mix until well combined.

Place bowl in fridge to cool for at least an hour.

When ready to serve, layer biscuit crumbs and whip in glasses or bowls and enjoy!

One of the best things about summer is Cold Brew Coffee! It's quick and easy and is my favourite way to make an iced coffee. Here I will unveil to you my latest brewing ratios and recipes.

This recipe shows you how to make what I think may be may favourite summer coffee.
Iced coffee spritzer. There's something really 'cool' about opening the fridge grabbing some concentrate and a bottle of sparkling water and throwing together this coffee to start my morning, maybe because it reminds me of making cordial as a kid. Plus I can do it with my eyes closed (although sometimes that does mean that the coffee is a touch strong.)

Here's the recipe:

First-up make a double strength batch of cold coffee concentrate by using half the water in the recipe. Here (If you do not have a filter for this recipe just grab any coffee filter paper from the supermarket and improvise.)


Once you've got your concentrate you just need to dilute it at about 1 to 5 with sparkling water, I use a soda stream.
